Waldorf Salad

* 4 large carrots, peeled and coarsely grated
* 1/2 cup chopped walnuts
* 2 medium apples, cored and cubed
* 1/2 cup raisins
* 1 Tbsp olive oil
* 1 Tbsp lemon juice
* 1/2 cup mayonaise (or veganaise)
* 1/2 t salt
* pepper


Place all ingredients in a large bowl and stir until well mixed. Refrigerate until you are ready to serve. Place on bed of leaf lettuce if desired.
