Vegan Eggnog Pancakes
Ingredients:
* 1 1/2 cups flour
* 1 tbsp sugar
* 2 1/2 tsp baking powder
* 1/2 tsp salt
* 1 cup vegan eggnog (see note below)
* 2 tbsp vegan margarine, melted
* Ener-G Egg Replacer for 1 egg
* oil or margarine for cooking
Directions:
Note: To make this eggnog pancake recipe vegan, you need to use a vegan
eggnog. You can find Silk brand soy eggnog in health food stores, or make
your own with this vegan eggnog recipe.
In a large bowl, combine the flour, sugar, baking powder and salt. In a
separate small bowl, combine the vegan eggnog, 2 tablespoons vegan
margarine and egg replacer. Make a well in the center of the dry ingredients
and pour in the wet ingredients. Mix just until combined.
Heat a griddle or large skillet over medium heat and grease lightly with oil or
vegan margarine. Pour batter onto griddle or skillet approximately 1/4 cup at
a time. Cook until bubbles form, then flip, and cook until lightly golden
browned on both sides.
